Undergraduate Studies in Restaurant/Foodservice Management

The Foodservice/Restaurant Industry

The foodservice industry is one of the largest and fastest growing in the nation today. The growth is continuing internationally with travel and economic changes.

Employment in the commercial and non-commercial food industries approximates 12 million people with sales in the billions. The U.S. Department of Labor predicts continued high employment of foodservice managers, growing faster than other occupations throughout the next century.

Restaurant/Foodservice Management at Oregon State University

Restaurant/Foodservice Management is a four year BS degree option in the College of Health and Human Sciences. This program continues to grow as it prepares graduates for professional management positions in the vast areas of foodservice such as restaurant management, catering, schools and universities, or transportation and clubs. In addition, employment opportunities include computer technology implementation, food and equipment sales, and product development.

Curriculum

Course curriculum is provided at Linn-Benton Community College and OSU, through the Dual Enrollment Agreement. The courses in the curriculum include: a year of culinary coursework at Linn Benton Community College, quantity food production and purchasing foodservice financial management, cost control, catering and event management, marketing, accounting, finance and personnel management, microbiology, statistics and social sciences. The Pre-Restaurant Management option at Linn-Benton provides coursework details.

Field and Work Experiences

Seniors in the 4-year BS degree program are required to complete a directed field experience in an area of the industry that they choose and arrange. This is done during Spring term of the senior year.

Work experiences throughout the summers or academic year in areas of food systems management are a major benefit for skills, professional networking, and knowledge of the food systems industries.

Special Resources

The Culinary Arts Program at Linn Benton Community College has three restaurants. At OSU, the University Foodservices facilities serve as laboratory for experiences. Together, students gain a diverse foodservice experience in these locations.

Scholarships

Professional associations, food industry members and national honorary societies have provided scholarships and awards for students in the College.
